WHITE BEAN TOMATO STEW

-1 cup onion (chopped) -1 tbsp oil -2 cloves garlic (whole, but smashed ) -1 28 oz can diced tomatoes -2 cups frozen spinach (thawed) -1 15 oz can white beans (rinsed and drained) -1/2 tsp black pepper -1 tsp salt -parmesan cheese for sprinkling on top

Heat oil in a sauce pan over medium heat. Add chopped onion and sauté until translucent. Add smashed garlic cloves, bay leaf, tomatoes, beans, spinach, salt and pepper and simmer for about 10 minutes. Serve over rice and sprinkle with parmesan cheese.
