Almond Butter Bars

These almond butter bars are a one-bowl, naturally sweetened recipe made with oats, honey, and almond butter. They’re easy, customizable and work as both a wholesome snack and simple dessert.

Ingredients

  • 1 cup almond butter
  • 1/2 cup honey
  • 1 tsp vanilla
  • 1 large egg
  • 1 cup oats
  • 1/4 cup oat flour *see notes
  • 1 tsp baking soda
  • 1/2 tsp salt, *see note
  • 1/2 tsp ground cinnamon, optional
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped, raw walnuts
  • 1/2 cup raisins
  • sea salt, optional for sprinkling on top

Instructions

  1. Preheat oven to 325F.
  2. To a large mixing bowl: add almond butter and honey. Stir until fully mixed.peanut butter and honey mixed in a mixing bowl
  3. Add egg and vanilla and mix again until smooth.egg and vanilla added to almond butter mixture
  4. Add the oats, oat flour, baking soda and cinnamon (if using) and stir until combined.almond butter, honey, egg, oats and oat flour being mixed
  5. Add your mix-ins and stir one last time until fully mixed.almond butter bars with mix-ins added
  6. Spread the mixture in a greased or non-stick 9″ x 13″ baking dish in an even layer.almond butter bar mixture in pan before baking
  7. Bake for 17-20 minutes, until golden brown and slightly risen.almond butter bars in pan after baking
  8. Sprinkle with sea salt if desired. 
  9. Allow to cool for 15-20 minutes in the pan before slicing into bars. 

Notes

Oat flour – add some extra oats to a blender or food processor and pulse until fine

Salt – if your nut butter contains salt you can skip this if you’d like.

Almond butter – any nut butter/seed butter will work here. I typically use natural peanut butter in these but you can also used the more processed types

Mix-ins – you can add any nuts, dried fruit or seeds you like, just keep the measurements approximately the same for the right balance.

Sweetness – if you want to make these a sweeter bar, you can drizzle with chocolate and/or add a high ratio of chocolate for the mix-ins
