These BBQ Chicken Quesadillas are a great weeknight meal! They are easy to make and taste amazing. I like sneaking in a few veggies to make them more wholesome.

4 6-7 inch flour tortillas
1cup shredded rotisserie chicken
1/3cup bbq sauce
2 tbsp chopped cilantro
1/2 shredded zucchini
2cups shredded cheddar cheese
2 tbsp frozen corn
Instructions
Heat griddle to 350F.
In a small bowl, combine bbq sauce and chicken. Stir until chicken is fully coated with sauce.
Assemble the quesadillas. Spread about 1/2 cup cheese on one tortilla, leaving about 1 inch of space around the edge.
Top with bbq chicken, shredded zucchini, cilantro and corn. Top with another 1/2 cup cheese and another tortilla. Repeat with remaining ingredients.
Place quesadillas on hot griddle and cook 3-4 minutes on each side, until golden. Before flipping, press down on quesadillas to flatten with the back of a spatula.
Enjoy with hot sauce, sour cream, guacamole or all of the above!
