Ingredients
UnitsScale
1pint strawberries, washed, hulled and diced
1cup plain or sweetened vanilla yogurt
10oz dark chocolate or dark chocolate chips
1/4cup coconut *only if using chocolate chips*
Instructions
Combine yogurt and strawberries in a mixing bowl.
Use a ¼ cup measuring cup to measure out scant ¼ cups of the mixture on a baking sheet lined with wax paper.
Place yogurt clusters in the freezer for 1 hour to set.
Melt the chocolate in 30 second intervals in the microwave until smooth. If you are using a chocolate chips, add 1/4 melted cup coconut oil to the chocolate to thin it out if necessary. If using a chocolate bar, this shouldn't be necessary.
Remove yogurt+berry clusters from the freezer and dip each in the chocolate, coating entirely with chocolate. Place back on baking sheet with a new piece of wax paper and continue to dip all the clusters in chocolate.
Return yogurt bites to the freezer to fully set for 30 minutes before enjoying and/or placing in a Ziploc bag or other freezer-safe container for storing.
Allow these to thaw for about 15 minutes before enjoying once these have been frozen longer than the initial 30 minutes.
