Rice Krispie Treats
7cups rice krispie cereal
5 1/2 cups mini marshmallows
6 tbsp salted butter
1 tsp vanilla extract
pinch of salt
sea salt for topping (optional)
Dipping Chocolate
8oz chopped dark chocolate
1 tbsp corn syrup
Instructions
Rice Krispie Treats
Grease a 9 x 13 inch baking dish with butter.
Melt butter in a large stock pot over medium-low heat. Add the marshmallows and stir constantly until fully melted. Remove from heat and add vanilla and a pinch of salt. Then add the cereal and stir gently with a rubber spatula until cereal is coated with marshmallow mixture.
Scrape the mixture into prepared baking dish and press down in an even layer using your hands. Grease your hands with a little butter to keep the mixture from sticking to your hands.
Place dish in the refrigerator to cool for about 30 minutes.
Melt the chocolate: place chopped chocolate in a microwave save bowl and microwave on high in 1-minute intervals until melted. Then stir in the corn syrup.
Remove the krispie treats from the fridge and slice into squares. Have a wire cooling rack nearby to place dipped krispie treats onto.
Place a krispie treat one-side down into the chocolate just to coat the top and down the sides slightly. Then place on cooling rack. Continue with the rest until all are dipped.
Place the cooling rack in the refrigerator for about 20 minutes to set the chocolate. After its in the fridge for about 10 minutes, sprinkle with sea salt so the chocolate is more tacky and doesn’t melt the salt.
