Ingredients

  • 1 lb pizza dough
  • 46 small figs (sliced)
  • 3 oz goat cheese (crumbled)
  • 23 slices prosciutto (torn into small pieces)
  • 1/4 cup olive oil
  • 3 cloves garlic (minced)
  • freshly cracked black pepper (to taste)
  • 3 cups arugula
  • balsamic glaze (to drizzle)

Instructions

  1. Preheat oven to 425F.
  2. Grease a 12-inch pizza pan liberally with oil or butter. (see note)
  3. Pour olive oil into a small dish and add the minced garlic. Set aside.
  4. Press dough into pan evenly, up to the edges.
  5. Brush pizza dough generously with garlic oil.
  6. Top the pizza with goat cheese crumbles, torn prosciutto and sliced figs. Add a few turns of freshly cracked black pepper or just sprinkle with pepper.
  7. Bake for about 30 minutes, or until the crust and the prosciutto is browned.
  8. After removing pizza from the oven, top with fresh arugula, balsamic glaze and more black pepper.
  9. Enjoy!

Notes

Pizza pan – for a thinner crust, feel free to use a larger pan. You might need a tad more goat cheese, an extra slice of prosciutto and a fig or two to cover the whole surface area.
