This is one of my favorite salsas. It's light, refreshing and has the perfect balance of sweet + heat.

Ingredients

Units Scale
  • 2 large diced mango (about 1 1/4 cups)
  • 1 diced jalapeño (about 1/4 cup)
  • 1 cup diced tomato
  • 1/2 cup diced onion (yellow or white)
  • 1/4 cup lime juice (2 limes)
  • 1 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp coriander

Instructions

  1. Combine mango, tomato, jalapeño and onion in bowl.
  2. Place limes in microwave for 30 seconds (this helps them release more juice). Juice the limes and add to the bowl with chopped veggies/fruit. You should end up with about 1/4 cup of juice.
  3. Add all of the spices, stir and enjoy!
