Ingredients

  • 1/2 cup butter (one stick) (softened)
  • 1/4 cup creamy peanut butter
  • 1 cup coconut sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup all-purpose flour
  • 3/4 cup rolled oats
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/3 cup mini chocolate chips
  • sea salt (for topping)

Instructions

  1. Preheat oven to 350F
  2. Combine flour, oats, baking soda and salt in a medium-sized bowl and set aside.flour, oats, baking soda and salt in a small mixing bowl
  3. In a large mixing bowl, use an electric mixer to beat butter and sugar for about 3 minutes. Add the peanut butter, egg and vanilla. Continue to beat until smooth. 
  4. Add the dry ingredient mixture and beat on low until fully combined. Stir in chocolate chips using a rubber spatula.
  5. Use a 1.5 tablespoon cookie scoop to drop cookie dough on a parchment-lined baking sheet. peanut butter chocolate chip oatmeal cookie in a cookie scoop
  6. Bake for 9-11 minutes. 
  7. Allow cookies to cool for 5 minutes before transferring to a wire cooling rack. Sprinkle with sea salt.
