The perfect fall lunch. Make it with my walnut kale pesto, marinated tomatoes and you will be looking forward to lunch all morning.

Ingredients

Scale
  • 2 slices multi-grain bread
  • 2 1/2 tbsp pesto
  • 1 tbsp mayo
  • 2 slices provolone cheese
  • 2 slices marinated tomatoes
  • 3 oz turkey deli meat
  • handful of mixed greens

Marinated tomatoes

  • 1 tomato (sliced)
  • 3 tbsp red wine vinegar
  • 4 tbsp avocado oil
  • 1/8 tsp salt
  • pinch of black pepper

Instructions

  1. Toast the bread, then spread one slice with mayo and the other with pesto.
  2. Add in order to one slice of bread: provolone cheese, sliced tomato, turkey and mixed greens. Top with remaining slice of bread. Enjoy!
