The perfect chicken salad. Full of flavor and easy to whip up in a flash.

Ingredients

  • 1/3 cup yellow onion (chopped small)
  • 1 1/2 tbsp avocado oil
  • 2 tsp red wine vinegar
  • 1/4 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup mayonnaise
  • 1 tbsp honey mustard
  • 2 tsp fresh dill (chopped)
  • zest from one lemon
  • 2 cups shredded chicken

Instructions

  1. Add the chopped onions to a mixing bowl. Then add avocado oil, red wine vinegar, salt, pepper, sugar and lemon zest and mix with the onions. Allow to stand at least 5 minutes.
  2. Add remaining ingredients to the onion mixture and stir to combine.
  3. Enjoy on toasted wheat bread with tomatoes and lettuce or over a salad of mixed greens with crackers.
