Easy Turkey Pesto Wrap With Roasted Red Peppers

Want to mix up your turkey sandwich life? Try making a turkey pesto wrap for a delicious lunch you’ll look forward to all morning. These are just as easy to throw together as a basic turkey sandwich but a little twist now and then can be so nice. I’m also going to share my secret for the most flavorful wrap possible!

This summer has been hot so I’m forever looking for ways to enjoy a really great meal without needing to turn on the oven or stove! These pesto turkey wraps are the perfect thing: no cooking is required and they come together so quickly. Oh, and they are also delicious! If you make your own pesto, you might need to pop the stove on for a second to toast the seeds, but you can also use your favorite store-bought pesto for maximum ease and absolutely no cooking! Let’s make it!

Ingredients for turkey pesto wraps

  • tortillas – Burrito-size wraps work well here. I used white tortillas but you can use a whole wheat tortilla as well.
  • pesto – You can pick some up from your local grocery store (Trader Joe’s makes a great vegan kale pesto that goes great on veggie bowls) or you can make your own homemade pesto. All you need to make the most amazing pesto are a few basic ingredients and a blender or food processor! Feel free to try my pepita pesto, walnut kale pesto or pesto without garlic!
  • mayonnaise – Substitute cream cheese for mayo and you’re on your way to some fancy pesto turkey pinwheels!
  • turkey deli meat
  • Havarti cheese – Thinly sliced parmesan cheese could work well for this too.
  • jarred roasted red bell pepper 
  • romaine lettuce – You really can use any kind of greens you’d like here – baby spinach, mixed greens, etc. But I like the crunch from the romaine in this particular wrap.
  • red onion
  • avocado
  • avocado oil – Olive oil also works but I prefer avocado oil since it doesn’t have a bitter taste
  • sea salt
  • lemon juice, optional

HOW TO MAKE A TURKEY PESTO WRAP

Okay, are you ready for my top tip for the most flavorful wraps + sandwiches? Drizzle a little avocado oil over the greens and a sprinkle of sea salt! That’s it. I know it sounds so minimal but it really adds SO much flavor and just makes the greens so much more pleasant to eat. You know how it can be when you just get a big bite of plain lettuce in a wrap? Not so yummy. This little step just elevates a homemade wrap to restaurant-level deliciousness ensuring every bite is full of flavor.

So first, shred your lettuce and thinly slice your red onion, then add to a small bowl (or a paper plate if you’re in full picnic mode!). Then drizzle a small amount of avocado oil and sprinkle a little sea salt over the lettuce. Give it a quick toss and set aside.

Now you’re ready to assemble your wraps!

Spread on a generous layer of mayo and pesto. Next comes cheese and turkey.

Then roasted red bell pepper. Now the lettuce and avocado. I just scoop the avocado straight onto the wrap, no need for the perfect slices here! A little squeeze of lemon over the avocado adds flavor and keeps the avocado from turning brown if you are making these ahead of time.

Now fold up the wrap. Fold the shorter sides of the wrap (so the sides are perpendicular to the line of fillings), then fold one side on the tortilla over, keeping the short ends tucked in as you roll the wrap over to seal. I like to slice the wrap in half for serving. And honestly, when I use burrito-size tortillas, just half a wrap is enough for me!

Storage Instructions

These turkey pesto wraps are meant to be enjoyed immediately! Especially if you choose to drizzle the lettuce with oil, they will become soggy very quickly. I would recommend enjoying these for a single day. They can be wrapped in plastic wrap or placed in an airtight container and kept chilled or at room temperature for a few hours at the most (i.e. if you’re bringing them on a picnic).

Ingredients

  • 1 large tortilla, burrito-size
  • 1 1/2 tbsp mayo
  • 2 tbsp pesto
  • 2 slices havarti cheese
  • 7 thinly sliced turkey deli meat
  • 34 leaves romaine lettuce, thinly sliced
  • 12 tbsp thinly sliced red onion
  • 23 tbsp sliced roasted red bell pepper
  • 1 small avocado
  • avocado oil
  • pinch of sea salt
  • 1/2 fresh lemon, optional

Instructions

  1. Combine shredded lettuce and sliced red onion in a small bowl and drizzle with a small amount of avocado oil and a sprinkle of sea salt. Toss to coat and set aside. 
  2. Spread mayo and pesto in the middle of tortilla. Add cheese, turkey, bell pepper, turkey, then top with the lettuce and onion mixture. 
  3. Scoop avocado out onto top of everything and give a squeeze of lemon juice if desired. 
  4. Tuck the shorter ends of the wrap in and roll over one side. Use your hand to tuck the wrap fillings in as you roll if necessary. Slice in half if desired and serve with your favorite chips!
