ROASTED CARROTS WITH HONEY AND GINGER

-7–8 whole carrots -1 tbsp avocado or olive oil -1/4 tsp salt -1/8 tsp pepper -1 tsp honey -1/2 tsp grated ginger -2 cloves garlic (minced)

Preheat oven to 400F. Wash and peel carrots. Place on a parchment-lined baking sheet. In a small bowl combine, oil, garlic, salt, pepper, ginger, then rub mixture all over the carrots to evenly coat.

Roast for 20 minutes, then reduce heat to 350 and continue to cook another 15 minutes or until tender.
