Roasted carrots with honey, ginger and garlic are the perfect fall side dish that is quick to throw together any night of the week.
These roasted carrots are a great side dish for almost any fall meal. And really beyond fall too. It’s simple, tasty and healthy. Just 5 ingredients (not including salt and pepper) and about 10 minutes of prep, then pop them in the oven and forget about them for 30 minutes. So easy! Let’s make them!
Ingredients
Roasted carrots with honey, ginger and garlic
- Carrots
- Oil (I usually use avocado)
- Ginger
- Garlic
- Honey
- Salt and pepper
Let’s make them
Wash and peel your carrots first. My carrots happened to be on the thin side and there wasn’t a huge difference in circumference from top to bottom so I left them as is. If yours are large, you might want to cut the carrots in half length-wise.
Then place carrots on a parchment-lined baking sheet and rub oil, grated ginger, minced garlic, salt and pepper all over the carrots until evenly coated.
Roast for 30-40 minutes, until tender.

Ingredients
- 7-8 whole carrots
- 1 tbsp avocado or olive oil
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 tsp honey
- 1/2 tsp grated ginger
- 2 cloves garlic minced
Instructions
- Preheat oven to 400F.
- Wash and peel carrots. Place on a parchment-lined baking sheet.
- In a small bowl combine, oil, garlic, salt, pepper, ginger, then rub mixture all over the carrots to evenly coat.
- Roast for 20 minutes, then reduce heat to 350 and continue to cook another 15 minutes or until tender.
