A simple recipe for roasted carrots that are full of flavor thanks to ginger, garlic and honey!

Ingredients

Scale
  • 78 whole carrots
  • 1 tbsp avocado or olive oil
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 tsp honey
  • 1/2 tsp grated ginger
  • 2 cloves garlic (minced)

Instructions

  1. Preheat oven to 400F.
  2. Wash and peel carrots. Place on a parchment-lined baking sheet.
  3. In a small bowl combine, oil, garlic, salt, pepper, ginger, then rub mixture all over the carrots to evenly coat.
  4. Roast for 20 minutes, then reduce heat to 350 and continue to cook another 15 minutes or until tender.

Notes

Carrots: If your carrots are particularly large or drastically different in circumference from top to bottom, you might want to slice them in half.
