Almond Butter Bars

These almond butter bars are one of those recipes I make on repeat because they check all the boxes: easy, wholesome, and genuinely delicious. They’re made with simple pantry ingredients like almond butter, oats, honey, and egg, all mixed together in one bowl and baked into soft, chewy bars.

I love that they’re naturally sweetened and endlessly customizable with mix-ins like walnuts, raisins, and chocolate chips (or m&m’s!). They work just as well for an afternoon snack as they do for a not-too-sweet dessert — which is exactly why I make them almost every week. Let’s make them!

Ingredients You’ll Need

You only need a handful of simple ingredients to make these bars:

  • Almond butter – provides healthy fats, flavor, and structure. You can sub in basically any nut or seed butter here.
  • Oats – make the bars hearty and filling
  • Honey – naturally sweetens and helps bind everything together
  • Egg – adds moisture and helps the bars set
  • Vanilla extract – for flavor
  • Baking soda – gives a little lift
  • Walnuts, raisins, and chocolate chips (optional) – for texture and extra flavor.
  • Cinnamon – another flavor boost option if you wish. Still amazing without it.

This particular combo of mix-ins is my jam right now. Feel free to mix it up with other nuts/seeds, chocolate (m&m’s or chopped chocolate bars), even other dried fruits!

I know high-protein is a hot topic right now but I wouldn’t call these “high” protein, but they do contain protein thanks to almond butter, egg and oats. This amount of protein and the fiber from oats and nut butter make these more filling and energy-sustaining than your typical granola bar.

These almond butter bars are a one-bowl, naturally sweetened recipe made with oats, honey, and almond butter. They’re easy, customizable and work as both a wholesome snack and simple dessert.

Ingredients

  • 1 cup almond butter
  • 1/2 cup honey
  • 1 tsp vanilla
  • 1 large egg
  • 1 cup oats
  • 1/4 cup oat flour *see notes
  • 1 tsp baking soda
  • 1/2 tsp salt, *see note
  • 1/2 tsp ground cinnamon, optional
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped, raw walnuts
  • 1/2 cup raisins
  • sea salt, optional for sprinkling on top

Instructions

  1. Preheat oven to 325F.
  2. To a large mixing bowl: add almond butter and honey. Stir until fully mixed.peanut butter and honey mixed in a mixing bowl
  3. Add egg and vanilla and mix again until smooth.egg and vanilla added to almond butter mixture
  4. Add the oats, oat flour, baking soda and cinnamon (if using) and stir until combined.almond butter, honey, egg, oats and oat flour being mixed
  5. Add your mix-ins and stir one last time until fully mixed.almond butter bars with mix-ins added
  6. Spread the mixture in a greased or non-stick 9″ x 13″ baking dish in an even layer.almond butter bar mixture in pan before baking
  7. Bake for 17-20 minutes, until golden brown and slightly risen.almond butter bars in pan after baking
  8. Sprinkle with sea salt if desired. 
  9. Allow to cool for 15-20 minutes in the pan before slicing into bars. 

Notes

Oat flour – add some extra oats to a blender or food processor and pulse until fine

Salt – if your nut butter contains salt you can skip this if you’d like.

Almond butter – any nut butter/seed butter will work here. I typically use natural peanut butter in these but you can also used the more processed types

Mix-ins – you can add any nuts, dried fruit or seeds you like, just keep the measurements approximately the same for the right balance.

Sweetness – if you want to make these a sweeter bar, you can drizzle with chocolate and/or add a high ratio of chocolate for the mix-ins
