Brown Sugar Simple Syrup

Making brown sugar syrup at home is so easy! And that caramel-y delicious flavor? So good. This syrup is perfect for making coffee drinks at home. All you will need is brown sugar and water!

Ingredients notes

Brown sugar – you can use light brown sugar or dark. Dark brown sugar just has more molasses and does have a richer flavor but its not going to make or break your syrup.

Water – I use filtered water when I make simple syrup but tap water is ok too.

Vanilla – I really love to add vanilla extract or vanilla bean paste and am including it in the recipe but you can leave it out and still have a delicious syrup for your coffee.

How to make brown sugar syrup

If you’ve made simple syrup before with granulated sugar and water, the process for this is identical.

Just place equal parts brown sugar and water in a sauce pan over medium heat.

Heat until sugar dissolves and the mixture begins to thicken.

You are now ready to enjoy your delicious syrup!

How to use this syrup

Brown Sugar Iced Coffee

Coffee sweetness and milkiness is such a personal thing but I’ll give you the measurements I use and you can play around with it to suit your tastes.

I’m almost always drinking cold brew, here’s what I do: for about 1/2 cup of cold brew concentrate I use 2 tbsp brown sugar syrup and about 1/4 cup milk AND a ton of ice 🙂

Depending on how concentrated the cold brew is, I may add a splash of water but usually a little ice melt is enough to smooth things out for me.

Other uses

  • cocktails (old fashioned)
  • chai lattes
  • try it in a rooibos latte
  • use it as an ice cream syrup – if you want to do this, might I recommend simmering longer until thick. MmmMmm.
  • If you’re going the thicker route, you can also use it on pancakes and/or waffles

How to store

Store brown sugar syrup in an airtight jar in the fridge for up to two weeks. Never lasts us that long though!

Ingredients

  • 1 cup brown sugar, dark or light
  • 1 cup water
  • 2 tsp vanilla extract or vanilla bean paste, optional

Instructions

  1. Add sugar, water and vanilla bean paste to a saucepan over medium heat. Heat until bubbling and sugar is dissolved.
  2. Allow to cool and store in an airtight container in the fridge for up to two weeks.

Notes

Thicker syrup for ice cream and pancakes – you can just continue to simmer the syrup after it dissolves until it reaches your desired thickness. If you’ve made the syrup for drinks and then decide you want to thicken it later, you can! Simply add the syrup to a saucepan and simmer away. You’re basically cooking out excess water to change the consistency.
