Brown sugar simple syrup is easy to make with just 3 ingredients and is a delicious way to elevate your homemade lattes and cocktails. I love to mix it up and add a cinnamon stick once in a while too!

Ingredients

Units Scale
  • 1 cup brown sugar, dark or light
  • 1 cup water
  • 2 tsp vanilla extract or vanilla bean paste, optional

Instructions

  1. Add sugar, water and vanilla bean paste to a saucepan over medium heat. Heat until bubbling and sugar is dissolved.
  2. Allow to cool and store in an airtight container in the fridge for up to two weeks.

Notes

Thicker syrup for ice cream and pancakes – you can just continue to simmer the syrup after it dissolves until it reaches your desired thickness. If you’ve made the syrup for drinks and then decide you want to thicken it later, you can! Simply add the syrup to a saucepan and simmer away. You’re basically cooking out excess water to change the consistency.
