This Curry Chicken Salad is the perfect summer lunch! It's packed with flavor and is easy to throw together for picnics and beach days.

Ingredients

  • 4 cups shredded rotisserie chicken ((about 1 whole rotisserie chicken))
  • 1/4 large white onion, diced ((about 3/4 cup))
  • 2 stalks celery, diced ((about 1/2 cup))
  • 1 tsp salt
  • 3 tbsp red wine vinegar
  • 1 tsp sugar
  • 2/3 cup pecan pieces, raw and unsalted
  • 1 cup red grapes, cut in half
  • 1 cup mayonnaise
  • 1 1/2 tbsp curry powder
  • 1/8 tsp black pepper
  • 2 tbsp chopped fresh parsley

Instructions

  1. Remove chicken from bones and shred first if not already done.
  2. Place diced onion and celery in a medium-sized mixing bowl. Add the vinegar, salt and sugar. Stir and set aside.

  3. While the celery and onions marinate, toast the pecans. Add to a non-stick pan over medium-low heat. Cook about 5 minutes, stirring constantly. Remove from heat when you start to smell the pecans.

  4. Add the chicken to the mixing bowl with the onions and celery. Add the grapes, pecans, mayo, curry powder, pepper, parsley to the bowl and stir until fully combined.

  5. Serve immediately or store in the fridge until ready to use. Enjoy within 3-4 days.

Notes

Servings I put the serving size as 4 because it’s just hard to know what someone might want as a serving. It might serve up to 6 depending on how much you use per sandwich.

Nuts – If you want to skip toasting the nuts, I get it. Toasting them really helps develop their flavor and gives them a better texture so if you can find them roasted and unsalted, go for it. Just know if you get salted, it will affect the flavor of the overall salad and you might want to adjust the added salt in the recipe.
