I love a good chicken salad sandwich. And I love curry. This Curry Chicken Salad with Grapes combines both of these loves perfectly. It’s the perfect use for leftover rotisserie chicken too. The spice from the curry pairs beautifully with fresh grapes and cashews add the perfect nutty crunch. This is a great way to do some lunch prep for the week too! And like most chicken salad recipes, it’s easy to throw together (yay!). Let’s make it!

Chicken Curry Salad with Grapes

These ingredients give such a good mix of flavors, resulting in a super fun twist on traditional chicken salad. 

  • Rotisserie chicken – or you can cook your own chicken breasts and shred. If you use rotisserie chicken, make sure to make your own chicken stock with the bones! Its the BEST.
  • Celery
  • Green onions/scallions
  • Lemon juice
  • Vinegar
  • Curry powder 
  • Garlic powder
  • Salt – the only salts I use Diamond Crystal Kosher salt or sea salt 
  • Black pepper
  • Sugar
  • Red grapes – There are a few different grape varieties that would work well in this recipe. Any type of sweet grapes, such as red grapes and Condord grapes work best. Stray away from cotton candy grapes (that would be weird) and green grapes, as these won’t work well with this recipe.
  • Roasted & salted cashews – cut into small pieces 
  • Mayonnaise – I like to use Sir Kensington’s Organic mayo because it tastes great!
  • Plain greek yogurt
  • Parsley
  • Cayenne pepper – this is optional if you want a little extra spice–just add a small pinch!

How to make this curried chicken salad recipe

1. Shred the chicken

If you are going with my recommendation of using a rotisserie chicken, get this part out of the way first! Get all the meat you can off the rotisserie chicken and place it in a medium bowl in the fridge so it can cool.

2. Quick pickle the onions and celery

This is a little step I always like to take when I make chicken salad. I dice onion and celery and add it to the bowl I want to mix the chicken salad in, then add lemon juice and salt. This helps reduce the onions’ pungency a tad and makes raw onions more pleasant to eat. Even though green onions aren’t as pungent as regular onions, I still find it adds flavor and makes the celery more enjoyable too!

3. Make the creamy dressing

Combine the mayo, greek yogurt, garlic powder, curry powder, and pepper. Whisk well to combine. 

4. Combine 

Add the chicken to the bowl with the celery and onion. Add the remaining ingredients: grapes (you’ll want to slice grapes), parsley and those crunchy cashews! Stir thoroughly and enjoy on your favorite bread or in a pita!

Can you freeze this chicken curry salad with grapes?

While you can freeze most things to thaw and enjoy later, chicken salad with grapes is not the ideal thing to do this with. When grapes are frozen and thawed they become mushy. If you really are wanting to freeze this chicken salad, you could make it without the grapes and freeze. Then thaw when you’re ready to enjoy and add the grapes when ready to serve.

How long does chicken salad last in the fridge?

Chicken salad will be good when stored in the fridge for 3-4 days. Make sure it’s refrigerated right after it’s done and never sits out too long.

Ingredients

  • 4 cups shredded rotisserie chicken
  • 2 green onion stalks, sliced thin
  • 2 stalks celery, diced
  • 1 tsp salt
  • 2 tbsp lemon juice
  • 2/3 cup cashews, roasted & salted and rough chopped
  • 1 cup red grapes, quartered
  • 1/2 cup mayonnaise
  • 1/2 cup greek yogurt
  • 1 1/2 tbsp curry powder
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley
  • optional: pinch of cayenne pepper for more heat

Instructions

  1. Combine green onions and celery in a mixing bowl and add lemon juice and salt. Stir to combine and set aside. 
  2. Do any other prep work like chopping grapes, cashews or shredding the chicken. 
  3. Combine greek yogurt, mayo, curry powder, garlic powder and pepper in a small bowl or liquid measuring cup. Whisk until combined. 
  4. Add chicken, grapes, cashews and parsley to the bowl with the green onion and celery. Pour in the dressing and stir until fully combined. 
  5. Taste and add more salt and pepper or cayenne if desired. 
  6. Store in an air-tight container in the refrigerator until ready to serve. Enjoy within 3-4 days.
