**I’ve revised this recipe to include refrigerating the dough before scooping & baking. Some readers had difficulty with the dough being so soft. Refrigerating the dough helps ensure less spread and a sturdier cookie. I’ve also included cinnamon as an additional + highly recommended add-in. Enjoy!

Sweet (but not too sweet) soft and chewy honey cookies. Make them in one bowl with just a big spoon and 7 ingredients! They’re so yummy and easy!

Ingredients

  • 1/2 cup salted butter, softened (enough to just mix with a spoon)
  • 1/2 cup honey
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon, optional

Instructions

  1. Preheat oven to 375F.
  2. In a large mixing bowl: combine butter, honey, brown sugar, and egg using a large spoon. Mix until creamy and no large chunks of butter remain. wet ingredients for honey cookies fully combine in one bowl

  5. Bake for 10-11 minutes, until golden brown around the edges. You don’t want to underbake these cookies, so make sure you get that golden brown ring before removing them. This will help with the sturdiness of the cookie. 
  6. Allow cookies to cool on the baking sheet for a few minutes after coming out of the oven, then transfer to a wire cooling rack. Sprinkle with sea salt
