1/2cup salted butter, softened (enough to just mix with a spoon)
1/2cup honey
1/2cup brown sugar
1 large egg
1 1/2cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
Instructions
Preheat oven to 375F.
In a large mixing bowl: combine butter, honey, brown sugar, and egg using a large spoon. Mix until creamy and no large chunks of butter remain.
Add the flour, salt and baking soda and stir again until dough is smooth.
Use a 1 1/2 tbsp cookie scoop to drop cookie dough onto a parchment lined baking sheet. Leave about 3 inches space around each cookie to allow for spreading.
Bake for 8-10 minutes, until just golden brown around the edges.
Allow cookies to cool on the baking sheet for a few minutes after coming out of the oven, then transfer to a wire cooling rack. Sprinkle with sea salt.
