This recipe comes to us today from the Alpha-Bakery Kids Cookbook, circa 1997. My mom gave me this book when I was a kid and I’ve been having fun reading it as an adult! Without a doubt, this is my favorite recipe from the book!

I love the simplicity of these cookies! Apart from the fact that are they super easy to make (made with just one bowl), they also star one of my favorite ingredients: honey! Personally, I always have these ingredients in my pantry, which means no special trips to the store required. Yay!
- Salted butter
- Honey
- Brown sugar
- Egg
- All-purpose flour
- Baking soda
- Salt
How to make honey cookies
First, start with soft butter in a mixing bowl. You want it to be soft enough to mix with a spoon. Combine the butter with egg, brown sugar and honey. Stir until creamy and fully combined.
Then add the dry ingredients (flour, salt, baking soda) and stir again until fully combined.
Next, use a cookie scoop to spoon 1 1/2 tbsp of dough per cookie onto a baking sheet lined with parchment. The dough is fairly wet, so a cookie scoop really helps drop the dough onto the sheet neatly. The cookies will spread so leave a good 3 inches between each.
Bake cookies at 375F for 8-10 minutes or until golden brown around the edges. Allow cookies to cool for 5 minutes before transferring to a cooling rack. Finally, sprinkle with a bit of sea salt and enjoy!

Ingredients
- 1/2 cup salted butter, softened (enough to just mix with a spoon)
- 1/2 cup honey
- 1/2 cup brown sugar
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat oven to 375F.
- In a large mixing bowl: combine butter, honey, brown sugar, and egg using a large spoon. Mix until creamy and no large chunks of butter remain.
- Add the flour, salt and baking soda and stir again until dough is smooth.
- Use a 1 1/2 tbsp cookie scoop to drop cookie dough onto a parchment lined baking sheet. Leave about 3 inches space around each cookie to allow for spreading.
- Bake for 8-10 minutes, until just golden brown around the edges.
- Allow cookies to cool on the baking sheet for a few minutes after coming out of the oven, then transfer to a wire cooling rack. Sprinkle with sea salt.
