1cup sliced kumquats, seeds removed
1cup granulated sugar
1cup water
Instructions
Place sliced kumquats, sugar and water in a pot over medium heat. Stir and cook until boiling. Reduce heat and cook until sugar is fully dissolved.
Remove from heat and use a spoon to smash the kumquats and release more of their juices.
Use a mesh strainer to remove kumquats and strain the syrup into a large spouted measuring cup. Transfer syrup to a glass jar and store in the refrigerator for up to 3 weeks.
