Prosciutto Wrapped Dates (Goat Cheese Stuffed Dates)

- 12 medjool dates
- 4 oz prosciutto, (you want twelve 1-2 inch x 5 inch strips)
- 2.5-3 oz creamy goat cheese
- honey, for drizzling
- about 8 sprigs fresh thyme
Instructions
- Preheat oven to 400F.
- Cut a small slit in each date with a paring knife, being careful not to cut all the way through.
- Stuff each date with about 1 tsp of goat cheese and top each with a few fresh thyme leaves.
- Wrap one strip of prosciutto around each date and put the seam side down on a baking sheet lined with parchment.
- Bake for 20-25 minutes, until prosciutto is browned.
- Drizzle with a little honey and add more fresh thyme leaves.
- Allow to cool about 15 minutes before serving.
