1 1/2cupsground graham crackers (about 1 1/2 sleeves)
2 sticks melted butter, divided
2 tbsp brown sugar
4ozunsweetened baking chocolate
1 1/4cupgranulated sugar
1 tsp vanilla extract
2 eggs
1/4 tsp baking soda
1/2 tsp salt
1/3cupall-purpose flour
1/4cupcocoa powder
2/3cupchocolate chips
1 1/2 cups mini marshmallows
sea salt, optional for topping
Instructions
Preheat oven to 350°F.
Line an 8 x 8 baking dish with parchment paper or grease with butter/cooking spray.
Combine ground graham crackers and brown sugar until mixed, then add 1 stick of melted butter. Stir until mixed and graham crumbs are fully moistened. Press the mixture into the bottom of the baking dish in an even layer. Bake for 15 minutes and set aside until you are ready to add the brownie mixture.
Melt the remaining stick of butter and baking chocolate in a small pot over medium-low heat. Heat just until chocolate is melted. You can also melt in the microwave. Just put chocolate and butter in a microwave-safe dish and heat for 30-second intervals, stirring between each interval, until melted.
Add the butter/chocolate mixture to a large mixing bowl, then add the granulated sugar. Beat vigorously with a whisk until fully mixed. Then add the eggs and vanilla and beat again until silky smooth.
Gently stir in the flour, cocoa powder, salt and baking soda, then stir in the chocolate chips. Use a rubber spatula to scrape the mixture into the baking dish.
Spread mixture evenly over the top of the graham cracker crust then bake for 40-45 minutes. You want the brownies to basically be done before adding the marshmallows. So, check for doneness with a toothpick. Lots of crumbs and a small amount of goo are ok.
Once the brownies are done, turn oven to broil and add an even layer of mini marshmallows across the top of the brownies. Broil for 2 minutes. If your broiler is uneven like mine, rotate the dish 180 degrees after 1 minute for more even golden brownness.
After removing brownies from the broiler, sprinkle with sea salt and allow brownies to cool for at least 20 minutes before serving. Enjoy!!
