S’mores Brownies

Summer is for s’mores brownies! These brownies are rich, delicious and unforgettable. They are perfect for summer potluck situations or just when you need a decadent dessert.

What is a s’mores brownie you ask? Well, its pretty much what it sounds like. The richest, chocolatiest brownies sandwiched between a layer of crisp graham cracker crust and gooey toasted marshmallows. And if you’re me, sprinkled with a dash of sea salt because it goes on top of every baked good as far as I’m concerned. Let’s make them!

  • graham crackers – wouldn’t be s’mores without graham crackers!
  • butter – salted butter is fine for both the crust and brownies
  • sugar – we will use brown sugar for the crust and granulated sugar for the brownies
  • baking chocolate – brownies made with baking chocolate yield a deeper, richer chocolate flavor which is just what we want in an indulgent dessert like this!
  • eggs – you will need 2 large eggs for this recipe
  • vanilla – vanilla enhances the chocolate flavor in these brownies
  • cocoa powder – for extra depth of chocolate flavor
  • dry ingredients – all-purpose flour, salt, baking soda
  • mini marshmallows
  • sea salt – optional but I just love adding a kiss of salt to baked goods, especially extra rich ones like this

How to make S’mores Brownies

Make the graham cracker crust. We pulse graham crackers in a food processor or blender until fine. Mix with melted butter and brown sugar, then press into a baking dish.

It’s so helpful to line your baking dish with parchment so you can easily lift and slice the brownies. The crust gets baked a bit while you make the brownies.

Melt baking chocolate and butter *just* until melted. Then combine with sugar and beat well with a whisk.

Next come the eggs and vanilla, and we beat until silky smooth.

Bake the brownies until nearly done, then top with a layer of mini marshmallows and broil!

Storage tips

Wait until brownies are fully cooled before transferring to an air-tight container. Store at room temperature for up to 5 days, if they last that long…

Ingredients

  • 1 1/2 cups ground graham crackers (about 1 1/2 sleeves)
  • 2 sticks melted butter, divided
  • 2 tbsp brown sugar
  • 4 oz unsweetened baking chocolate
  • 1 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 2/3 cup chocolate chips
  • 1 1/2 cups mini marshmallows
  • sea salt, optional for topping

Instructions

  1. Preheat oven to 350°F.
  2. Line an 8 x 8 baking dish with parchment paper or grease with butter/cooking spray.
  3. Combine ground graham crackers and brown sugar until mixed, then add 1 stick of melted butter. Stir until mixed and graham crumbs are fully moistened. Press the mixture into the bottom of the baking dish in an even layer. Bake for 15 minutes and set aside until you are ready to add the brownie mixture.graham cracker crust mixture pressed into a baking pan
  4. Melt the remaining stick of butter and baking chocolate in a small pot over medium-low heat. Heat just until chocolate is melted. You can also melt in the microwave. Just put chocolate and butter in a microwave-safe dish and heat for 30-second intervals, stirring between each interval, until melted.melted baking chocolate and butter
  5. Add the butter/chocolate mixture to a large mixing bowl, then add the granulated sugar. Beat vigorously with a whisk until fully mixed. Then add the eggs and vanilla and beat again until silky smooth.
  6. Gently stir in the flour, cocoa powder, salt and baking soda, then stir in the chocolate chips. Use a rubber spatula to scrape the mixture into the baking dish.brownie batter in pan
  7. Spread mixture evenly over the top of the graham cracker crust then bake for 40-45 minutes. You want the brownies to basically be done before adding the marshmallows. So, check for doneness with a toothpick. Lots of crumbs and a small amount of goo are ok. 
  8. Once the brownies are done, turn oven to broil and add an even layer of mini marshmallows across the top of the brownies. Broil for 2 minutes. If your broiler is uneven like mine, rotate the dish 180 degrees after 1 minute for more even golden brownness.smores brownies in baking dish
  9. After removing brownies from the broiler, sprinkle with sea salt and allow brownies to cool for at least 20 minutes before serving. Enjoy!!
