Sparkling Thyme Lemonade

This thyme lemonade is the refreshing fizzy drink we need this summer. I like to add a little ginger for extra pizazz but that’s optional!

I’m almost always going to pass on lemonade but a fun flavored one with bubbles? Thats going to change things. The combination of thyme and lemon is almost certainly underrated. If you are worried its going to taste like a chicken marinade, don’t worry, sugar changes that entirely. Let’s make it!

Ingredients

  • Fresh lemon juice – would we have lemonade without this? no.
  • Sugar
  • Fresh thyme – its fun to save some for garnish too
  • Fresh ginger – optional but I like the little touch of zing it adds
  • Club soda – for the bubbles!

How to make thyme lemonade

Start by making the syrup.

Combine thyme, ginger, sugar and water in a pot over medium heat. Cook until the mixture comes to a boil and the sugar is dissolved.

Set this aside to cool while you juice the lemons. Leave the thyme and the ginger in the syrup, this also allows it to steep and strengthen flavor.

Strain the syrup and the lemon juice through a mesh sieve into a jar or large spouted measuring cup.

I like about equal parts of club soda to lemonade mixture, with a hearty amount of ice in the glass. Wait to add club soda until ready to serve.

  • 1/2 cup sugar
  • 1/2 cup water
  • 1/4 cup fresh thyme sprigs, just approximate in a measuring cup
  • 1 tbsp fresh chopped + peeled ginger, optional
  • 1 cup fresh lemon juice
  • 1 cup club soda

Instructions

  1. Combine sugar, water, thyme and ginger in a pot over medium heat. Cook until the mixture begins to boil and sugar is fully dissolved. Stir as necessary.
  2. Remove the syrup from heat once sugar is dissolved and set aside while you juice the lemons.
  3. Strain the lemon juice and syrup through a mesh sieve into a large spouted measuring cup or jar if planning to store. You can store for about 3 days if you want to make it ahead.
  4. Add club soda and ice once ready to serve.
