1/4cup fresh thyme sprigs, just approximate in a measuring cup
1 tbsp fresh chopped + peeled ginger, optional
1cup fresh lemon juice
1cupclub soda
Instructions
Combine sugar, water, thyme and ginger in a pot over medium heat. Cook until the mixture begins to boil and sugar is fully dissolved. Stir as necessary.
Remove the syrup from heat once sugar is dissolved and set aside while you juice the lemons.
Strain the lemon juice and syrup through a mesh sieve into a large spouted measuring cup or jar if planning to store. You can store for about 3 days if you want to make it ahead.
