Ingredient notes
- fresh strawberries – if you want to use frozen strawberries, you will want to thaw them and strain out some of the liquid before cooking the syrup.
- granulated sugar – cane sugar will also work.
- heavy cream – this is really what is going to yield the most creamy and delicious cold foam.
Recipe testing notes
I tried making this cold foam a few different ways. I tried making it with freeze-dried strawberries, which I love using in baking! However, it got really clumpy and did not blend into the cream. I also tried using store-bought jam instead of syrup. This was okay, but you end up with strawberry chunks, which isn’t necessarily a bad thing but I prefer my cold foam to be nice and smooth. If you can find strawberry jelly, that would work better but all I usually see at the grocery store is strawberry jam.
And so I landed on my preferred method being to make my own strawberry syrup. That way you get a smooth + creamy cold foam. If making your own strawberry syrup sounds intimidating, I got you! It’s really doable and I’ve got step-by-step instructions in the recipe card.
Equipment needed
- handheld milk frother – this is a must for making coffee shop-worthy drinks at home. This frother is AMAZING. I will only use this one from now on. It is the most powerful frother I’ve ever had and it never gets wobbly like some do.
- fine mesh strainer
Make a strawberry matcha latte
Matcha is one of my favorite things and matcha + fruity flavors are a true culinary match made in heaven. To make an iced matcha latte with this cold foam, you will need:
- ceremonial grade matcha – you can use culinary grade matcha powder too, but the color will not be as vibrant and the flavor is usually a touch more bitter.
- milk of choice – you will need a little milk to add to the latte base. Any milk you like is fine, but I prefer to use either non-fat milk or a plant-based milk since the cold foam is so rich. But use what you prefer!
- sugar – optional, but I add a touch to the latte. I like either brown sugar or granulated sugar. But I’ve been known to use a splash of agave nectar too.
- strawberry cold foam
Add matcha powder to a small bowl and use a bamboo whisk to whisk in hot water until no lumps remain. Add a teaspoon or two of sugar and stir until dissolved. Add milk, then transfer to your drinking glass with ice cubes.
Top with your beautiful strawberry cold foam and enjoy!
Make a latte with strawberry cold foam
As much as I am a huge matcha lover, I am equally an iced coffee lover so you can bet I also enjoy this cold foam with iced coffee or cold brew! Let’s do it!
If you have an espresso maker, prepare two shots of espresso. I don’t, but I’m planning on getting a stove-top one and figuring out that whole shebang. For now, I use a french press to make super strong coffee with a small amount of water and it works! You can follow the coffee preparation instructions in this nutella latte post if you want to prepare the coffee that way.
You can also just use cold brew coffee – either homemade cold brew or your favorite store-bought will do! This has been my favorite store-bought cold brew lately!
If preparing coffee using espresso shots or my french press method, you’ll want to combine with some milk. Regular milk or any plant-based is fine. Add to a glass with plenty of ice, then top with cold foam!
