As we know, I have an Aerogarden (affiliate link) that I LOVE and it has been just overflowing with mint! This simple syrup is a great way to use some of it up. Also not a bad idea to double the batch and share with friends!

Why you’ll love it

Made with fresh mint: Using real peppermint leaves (not extracts) gives the syrup a clean, naturally bright mint flavor that tastes fresher than anything store-bought.

Only 3 ingredients: You just need water, sugar, and mint—no additives, no preservatives, no fuss.

Versatile and delicious: Add it to iced coffee, tea, lemonade, cocktails, mocktails, or brush over cake or scones. It instantly upgrades anything it touches.

Quick and foolproof: The whole recipe comes together in about 10 minutes, and the hardest part is waiting for it to cool.

Perfect for using up extra mint: If you grow mint or frequently buy it for recipes, this syrup is a great way to use up leftover sprigs before they wilt.

How to make it

The process for making peppermint syrup is as simple as the ingredients!

Simply place the fresh mint, water and sugar in a pot on the stove over medium heat and stir.

Allow this to cook, stirring occasionally until the sugar dissolves and the mixture begins to bubble gently.

Remove from heat and allow it to rest for about 30 minutes before straining. If you’re pressed for time, you can steep for less time, this just helps impart more deep mint flavor.

Strain it through a mesh sieve and store in glass jar or syrup bottle.
