Apricot Granola with Ginger and Dark Chocolate
This homemade Apricot Granola is better than store-bought in every way!

I love this granola recipe so much. And everyone I make it for does too. It’s lightly sweet, perfectly crunchy, and full of warm, balanced flavor. Quick-cooking oats, coconut, and nuts bake into golden clusters, while chewy dried apricots and a touch of ground ginger add brightness and gentle spice. Dark chocolate brings in all together and compliments the sweetness and spice like a dream. It’s the kind of granola that feels special but it’s easy — great for yogurt bowls, snacking by the handful, or gifting. Let’s make it!
Ingredient notes

Oats. I like to use quick-cooking oats for a lighter, crisper texture but you can also use regular rolled oats.
Ground ginger. This granola is nothing without ginger. Just kidding. It’s still really good, but the ginger puts it on another level. The warmth + spice pairs amazingly well with the apricots and dark chocolate.
Ground flax seed. Ground flax really helps you get those clusters!
Pepitas/Pumpkin seeds. You will need unroasted and unsalted because they will be cooked in the granola and we will be adding salt.
Pecans. You will also need raw and unsalted for the same reason as above. You can choose to use whole pecans or pieces.
Shredded unsweetened coconut. Also important that this is not toasted before mixing in with the granola so it doesn’t get overcooked.
Olive oil. You can also use avocado oil or coconut oil. Coconut oil will change the flavor slightly but will still work and be delicious.
Brown sugar. For caramelization and depth of flavor.
Maple syrup. For natural sweetness and binding granola together without it being overly sticky.
Dried apricots. I love Trader Joe’s but any dried apricots should be fine here. Note: these will be mixed in after the granola is cooked.
Dark chocolate. My favorite chocolate to use here is Trader Joe’s Dark Chocolate Lover’s Bar. It’s one of my favorite dark chocolates, period. But the flavor profile also compliments this granola so well.
Salt. Crucial for flavor!
How to make it
It’s so easy! Everything (except for the apricots and chocolate) gets mixed in one bowl and then baked. I add the chopped apricots right when the granola comes out of the oven and then the chocolate once it’s fully cooled.


Once the base of the granola is all mixed up. Spread it out on two baking sheets. One regular size and a half sheet will do.
Cook until golden. Then fold in the apricots. Wait until fully cooled to add the dark chocolate and you are ready to rock.

Ingredients
- 3 cups quick cooking oats
- 1 cup raw pepitas
- 1 1/2 cup chopped pecans
- 1 cup coconut
- 1/2 cup ground flaxseed
- 1/3 cup brown sugar
- 1 tsp salt
- 1 1/2 tbsp ground ginger
- 1/2 cup olive oil
- 3/4 cup maple syrup
- 1 1/4 cup dried apricots (chopped)
- 3 1/2 oz dark chocolate (chopped )
Instructions
- Preheat oven to 350.
- To a large bowl add: oats, nuts, coconut, flax, salt, ground ginger and brown sugar. Mix to combine all ingredients then add maple syrup and olive oil. Mix until all ingredients are moistened.
- Press into two, parchment-lined baking sheets (one regular sized sheet and a smallish one should do).
- Bake for 30 minutes, rotating the racks half-way through, until browned. Soon after removing from the oven, add the chopped apricots and mix into warm granola. Once the granola has cooled, add the dark chocolate.
