These Mediterranean Potatoes with feta, lemon and fresh herbs are such an easy way to turn roasted potatoes into the star of the meal. So flavor and so easy to whip up any night of the week and for any occasion!
This is just a quick little post for a quick little recipe. Roasted potatoes packed with lots of fresh mediterranean inspired herbs, feta and lemon. It is lemon season after all! I found these cute little potatoes at Whole Foods weeks ago and I can’t stop buying them. You definitely can do this with any potato, though.
Ingredients
Roasted Mediterranean Potatoes
- 1 lb mini potatoes (washed thoroughly )
- 1 tbsp fresh mint (chopped)
- 1 tbsp fresh parsley (chopped)
- 1 tbsp fresh oregano (chopped )
- 2 tbsp olive oil
- 1/4 cup crumbled feta cheese
- 1 lemon (juice and zest )
- 1/4 tsp black pepper
- 1 tbsp salt
Options for roasting your potatoes
So, I like to microwave or par boil my potatoes and then crisp them in a pan with a small amount of oil. You can also just toss them with some oil and roast them if that’s easier for you! Best method for roasting potatoes is: dry the potatoes as much as you can before placing them on your baking sheet (hopefully lined with parchment paper), lightly oil, season and bake for about 30-40 min at 425F.
In the case of these tiny little guys, I went with par boiling first because I didn’t think I would be able to get them to cook evenly in the microwave.
You will see in the recipe that I say to add salt when the potatoes are boiling, so, if you don’t use this method you will want to adjust that since one tablespoon of salt would be way too much if you are putting the salt straight on the potatoes. Just season to taste! It’s the best way to learn how to cook on your own.
Yeah…I still put ketchup on them. 🙂

Ingredients
- 1 lb mini potatoes (washed thoroughly )

- 2 tbsp olive oil
- 1/4 cup crumbled feta cheese
- 1 lemon (juice and zest )

Instructions
- Slice potatoes in half and place in a medium sauce pan. Cover with water and bring to a boil. Add 1 tbsp salt to the water. Allow potatoes to boil until tender. Drain.
- Heat olive oil in a large non-stick skillet over medium heat. Add potatoes. Toss potatoes with tongs occasionally until lightly browned on all sides.
- Toss potatoes with herbs, feta, lemon zest, pepper and lemon juice to taste, I added about 2 tbsp. Add more salt if necessary.
- Enjoy!
