Boursin Mac & Cheese

This creamy Boursin mac and cheese is rich, garlicky, and ready in 20 minutes or less. The perfect easy dinner or comforting side dish!

I don’t know who needs to hear this but you can make mac and cheese with Boursin in under 20 minutes with two ingredients. Okay, 3 if you count water. It’s delicious and amazing and I love it. Let’s make it!

What you’ll need

Boursin cheese – I love the garlic & herb or shallot & chive flavors, but if any of the other flavors sound good to you, go for it!

Pasta – I love going with classic macaroni here, but ANY pasta shape will work.

And that’s it! Can you believe it? I still can’t.

Where to buy Boursin cheese

The best places to buy your Boursin are Costco and Trader Joe’s. They always have the lowest price! I just found an amazing deal at Costco for a 3-pack for $6.99! That’s not the norm but it’s still a great price at Costco without the extra discount.

How to make it

Just boil water + cook pasta according to instructions. Reserve 1/2 cup of the pasta water before draining the pasta.

Once pasta is drained, add the Boursin and about 1/2 the pasta water. Stir until cheese is fully melted and coating the pasta. You can add more pasta water if necessary.

Make this a more complete meal

This dish is perfect for when you want something comforting and quick. And while it’s delicious and amazing on its own, sometimes just pasta and cheese don’t cut it.

  • Serve this alongside grilled chicken or salmon and veggies for a balanced meal.
  • Try using a protein pasta for a more satiating + nutritious mac and cheese.
  • Top it with fresh herbs and toasted buttery bread crumbs.
  • Turn it into mac & peas by adding some frozen peas to the boiling pot of pasta.

Reheating

I think we all know that no mac and cheese is as good reheated as when it’s fresh. But here’s how I get it as close as possible to fresh mac:

Place a small amount of water (for one serving about 2 tbsp) in a small pot, add the mac and cheese, cover with a lid and cook over medium low until heated through, stirring occasionally.

The water helps revive the sauce and nixes that mealy/curdled sort of texture that cheese sauces get when they are refrigerated.

  • 5.3 oz package garlic & herb Boursin cheese

Instructions

  1. Boil water and cook pasta according to package directions. Before draining the pasta, reserve 1/2 cup of pasta water. 
  2. Add the Boursin cheese to the pot with the pasta and about half of the water. Stir gently until Boursin is completely melted. Add more water if necessary. Enjoy!
