Coconut Syrup
Can you buy coconut syrup online or maybe in the store? Sure. But its SO easy to make yourself! With just toasted coconut, sugar, water and 15 minutes, you are on your way to a delicious homemade syrup for coffee, tea and more!
I love buying coffee out but I try to keep it as a treat and not a daily habit. So every week I make a fun syrup for my coffee or experiment with different cold foam flavors to keep my home coffee interesting. With it being summer and me getting a stash of my favorite coconut peanut butter in the world, toasted coconut syrup just made sense. Let’s make it!
Coconut syrup ingredient notes
sugar – you can use regular granulated sugar, cane sugar, brown sugar or even coconut sugar for a more naturally-sweetened syrup (and extra coconut flavor!).
coconut – use unsweetened coconut. we will be adding plenty of sugar!
coconut extract – this is optional but a little dash really does help amp up the coconut flavor so I recommend it.
And besides water, that’s all you’ll need to make a delightful coconut syrup for coffee!
How to make coconut simple syrup
Start by toasting the coconut. Add the shredded coconut to a pot over medium-low heat. Stir frequently and cook until the coconut is beginning to brown and smells amazing.
Then add the sugar, water and coconut extract. Stir and cook until sugar is dissolved and syrup begins to boil.
Strain the mixture through a mesh sieve and allow to cool before transferring and storing in the fridge for up to 2 weeks.
How to use coconut syrup
This toasted coconut syrup is the perfect way to add a little tropical flair to all sorts of treats! Some of my favorite ideas include:
- Coffee
- Tea
- Cocktails
- Lemonade
- Ice cream
- Pancakes
- Waffles
Coconut cold brew recipe
As alluded to earlier, coffee is my favorite vehicle for enjoying this syrup. And to be more specific, right now I’ve been making a coconut cold brew with coconut cold foam. SO GOOD.
I start by adding cold brew and coconut syrup to a glass. Sweeten to your preference, but I usually add 1-2 tbsp of syrup at this point.
Then add a little more syrup (2 tsp to 1 tbsp) to a cup with half & half or cream and use a milk frother to thicken and make cold foam. Load your glass with ice, then top with cold foam and a little extra toasted coconut if desired!

Ingredients
- 3/4 c unsweetened shredded coconut
- 1 cup sugar
- 1 cup water
- 1/2 tsp coconut extract
Instructions
- Place a pot over medium-low heat and add shredded coconut. Stir frequently and cook until coconut is turning golden brown.
- Add sugar, extract and water, stir and increase heat to medium. Bring the mixture to a boil and remove from heat once sugar is dissolved.
- Strain the syrup through a mesh sieve to remove coconut.
- Transfer syrup to an airtight bottle or jar and allow to cool before storing in the fridge for up to 2 weeks.
