Turkey Pesto Sandwich with Marinated Tomato and Provolone

This Turkey Pesto Sandwich is the perfect way to make your lunch feel a little more special.

When you want something simple but still crave a little freshness, this turkey pesto sandwich hits the spot. The marinated tomatoes (a little secret to amazing sandwiches) add a burst of flavor, the pesto gives it a herby kick, and it all comes together in minutes.

    Ingredient notes

    To make this Pesto Turkey Sandwich, you will need:

    • Bread: You can use whatever bread you like. My favorite is a multi-grain sort for this sandwich. Sourdough or ciabatta rolls work well too.
    • Pesto: use your favorite store-bought pesto or make your own, I love my walnut kale pesto on this sandwich.
    • Turkey: you can use sliced deli turkey or left-over roast turkey breast. You can also swap in chicken.
    • Cheese: provolone is my go-to sandwich cheese. Fresh mozzarella or havarti work well too!
    • Marinated tomato: these add so much flavor. you will need: sliced tomato, vinegar, avocado oil or olive oil, salt and black pepper

    How to make this Turkey Pesto Sandwich

    Here’s my little secret to the best sandwich: marinate the tomatoes. All you need to do is place sliced tomatoes in a bowl with some oil, vinegar, salt and pepper. Let this sit for about 10 minutes and you’re good to go. Trust me, it adds so much flavor!

    Next, toast your bread.

    Then, spread mayo on one slice of bread and spread pesto on the other side. Then add a slice of provolone cheese, tomatoes and then the turkey. Lastly, some mixed greens for a little crunch.

    You can also make this a hot sandwich by grilling in a hot pan with a little butter until the cheese is melted.

    Substitutions and Additions

    As evidenced in this Turkey Pesto Wrap, roasted red peppers are highly compatible with pesto!

    Sun-dried tomatoes are a good swap for the marinated tomatoes.

    Storage Instructions

    This sandwich makes for a great lunch to prepare the day before! If you’re preparing this ahead, simply store sandwiches in an airtight container or wrap them in plastic wrap.

    Ingredients

    Scale
    • 2 slices multi-grain bread
    • 2 1/2 tbsp pesto
    • 1 tbsp mayo
    • 2 slices provolone cheese
    • 2 slices marinated tomatoes
    • 3 oz turkey deli meat
    • handful of mixed greens

    Marinated tomatoes

    • 1 tomato (sliced)
    • 3 tbsp red wine vinegar
    • 4 tbsp avocado oil
    • 1/8 tsp salt
    • pinch of black pepper

    Instructions

    1. Toast the bread, then spread one slice with mayo and the other with pesto.
    2. Marinate the tomatoes (optional). Slice tomatoes and place them in a bowl with the avocado oil, red wine vinegar, salt and pepper. Let this sit for 10 minutes.
    3. Add in order to one slice of bread: provolone cheese, sliced tomato, turkey and mixed greens. Top with remaining slice of bread. Enjoy!
